Oatmeal Cranberry Cookies

1 cup butter, room temperature
1 cup brown sugar
1/2 cup granulated sugar

2 eggs
1 teaspoon vanilla extract

1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups quick oats

1 cup dried cranberries
3/4 cup sweetened flaked coconut
3/4 cup chopped pecans

In large mixing bowl, beat butter and sugars until creamy. Add eggs and vanilla and mix until well combined. In a separate bowl, whisk together flour, soda, cinnamon and salt. Slowly add to butter mixture until combined. Mix in oats. Then add dried cranberries, coconut and pecans.

Scoop dough onto wax paper and roll into a log, about 2 inches in diameter. Refrigerate until firm. Preheat oven to 375 degrees. Slice dough into 1/2 inch pieces and bake for 9 minutes.
