Potato Bread




Ingredients:

1 1/2 teaspoon yeast
11 1/2 ounces warm water ( equal to 1 1/2 cups minus 1 tablespoon)
2 tablespoons sugar
2 tablespoons butter, room temperature
2 tablespoons dry milk
1 1/2 teaspoons salt
1/4 cup instant mashed potatoes (flakes)
3 1/4 cup flour

Place yeast, water and sugar in mixing bowl (like a Kitchenaid or Bosch.) Let sit for about 5-8 minutes, or until frothy. Add remaining ingredients and mix with dough hook for 30 seconds on low. Scrape sides of bowl and mix on medium speed for 7-8 more minutes. Remove hook, cover bowl with dish towel and let sit in warm place for 1 1/2 hours (or until dough is at least double in size.) Preheat oven to 350 degrees. Throw dough out onto floured surface and form into a log. Spray bread pan with cooking spray, place dough in pan, let sit for about 10 minutes, then bake for 35 minutes. Remove from pan immediately and cool on wire rack. Let sit at least 30 minutes before slicing--best when completely cooled.
