My cucumber salad is fresh and healthy--just in time for summer.
And, it's perfect for lunch, or as a side dish for dinner.
1 English cucumber, peeled and diced
1/2 pint grape tomatoes
1 cup cottage cheese, rinsed and drained
2 tablespoons olive oil
1 tablespoon rice vinegar
kosher salt
fresh ground pepper
Toss everything together. Season with salt and pepper to taste.
