THIN MINT COOKIES

I don't know what it is about thin mints, but I just love them and this variation is no exception. These are light and flaky plus sweet and salty--one of my favorite combinations. And, with only 2 ingredients, you can have them whipped up in just minutes.





Ingredients
Ritz Crackers
Mint Melting Chocolate (such as Wilton's, which you can buy at your local craft store)

Melt chocolate according to package directions (or in a double boiler). Dip Ritz Cracker into chocolate and place on cookie sheet lined with wax paper. Once tray is filled, place in refrigerator until chocolate has hardened. Store in fridge or a cool place.
