Grandma Bingham's Brisket

This recipe came from Grandma Bingham, hence we call it Grandma Bingham's Brisket. The funny thing is is that my husband doesn't know who "Grandma Bingham" is. She's actually not our grandma (although she may have been someone's grandma, I'm sure,) but a good friend of the family many years ago. Once I got my hands on it it has become a regular in our home. A definite sunday dinner favorite. Thanks Grandma Bingham!



Ingredients 
3 to 4 pound brisket
1/2 cup soy sauce, divided
Fresh ground pepper
Onion powder
2 cups beef broth


Trim any excess fat from brisket. Set aside. Put 1/4 cup soy sauce in glass baking dish. Cover surface of soy sauce with ground pepper and onion powder. Place brisket, flat side down, in pan. Pour remaining soy sauce over brisket and cover surface again with pepper and onion powder. Roast, uncovered, at 400 degrees for 40 minutes. Remove pan from oven and lower oven temperature to 325 degrees. Add beef broth to pan and cover tightly with foil. Roast for an additional 2 1/2 hours. Slice or pull apart meat. Keep in juice. Transfer to serving platter just before serving.
