Dinner Rolls



Ingredients:
2 eggs, room temperature, 
  plus enough warm water to equal 1-1/2 cups plus 2 tablespoons
2-1/2 teaspoons yeast
1/2 cup sugar

1 teaspoon lemon juice
6 tablespoons oil
1-3/4 teaspoons salt
5 cups flour (25 ounces)

Place eggs and water in small bowl and whisk briefly until eggs are separated. Pour mixture into mixing bowl. Add yeast and sugar and let sit about 5 minutes, or until foamy. Add lemon juice, oil, salt and flour. Knead on low for about 30 seconds. Scrape sides of bowl. Mix on medium for 7 to 8 more minutes. Remove dough hook, cover and let sit for 60-90 minutes or till at least double in size.

Throw dough out onto floured flat surface and form into log. Let sit for 5-10 minutes.

Meanwhile, butter pan.
Slice dough log in half.
Stretch dough out.
With a pizza slicer, cut dough into 10 equal parts.


Roll dough up and form.
Pinch bottom.
Place an inch or so apart on baking sheet.
Cover and let raise for about 60 to 90 minutes.
Bake for 15 minutes at 350 degrees.
